Lobia (Black-Eyed) Beans & Mushroom
Method
Place beans and water in pot. Bring to boil. Discard the water from first boil. This is usually recommended not only to ease digestion of beans but also rid them of any unwanted toxins.
Bring beans to a boil again, cover and turn down heat, simmer for 20-30 minutes or till tender.
Sauté chopped onions in a frying pan using 1 Tbsp of Olive Oil until the onion turns golden in color.
Add mushrooms, stir/fry till they wilt.
Add fresh tomato juice, tomato paste, and season with salt, pepper and cumin. Add 1 cup of water or homemade vegetable broth and simmer for 5-10 minutes.
Add the boiled beans to the salsa pan and let it simmer for 10 more minutes. If preferred, season with lemon juice.
Serve with green salad and white rice as usual.
