Farro Salad
Ingredients
Lettuce 2-4 handfuls
Farro 1 handful
Almonds 10 almonds
Pomegranate seeds 2 tbsp
Sprouts If available
Olive oil 1 tbsp
Lemon and salt to season
Instructions
Boil farro as per instructions on the packet (typically boil in 1 part farro 3 parts water for 30 minutes)
Wait for faro to cool slightly
Chop lettuce
Mix in a big bowl with seasoning
Top with almonds, pomegranate and sprouts
Feel free to add 1 extra vegetable e.g. avocado
PS. If farro is not available near you feel free to use lentils or quinoa instead.
